Jorge Luis Erazo is 36 years old and represents a new generation of Colombian coffee growers, blending inherited tradition with technical innovation. He has 12 years of experience as a producer and has run his own farm, Las Huertas, for six. Jorge leads the farm alongside his wife, Avellana Torres, and their daughter, Luisa María.

Las Huertas is a 5 hectare farm in the Casabuy district of Chachagüí, Nariño, planted in full sun at 2,100 metres. It is one of the highest elevations for coffee cultivation in Colombia, which supports a high concentration of sugars and a vibrant acidity. Jorge harvests at his own farm, then processes the coffee at the farm of his father, renowned producer Luis Alberto Erazo, for added quality control during milling.

This lot is a blend of Yellow and Red Caturra. Whole cherries are sealed in 30 kg GrainPro bags for five days (120 hours) of controlled oxidation, allowing flavor precursors to develop. The cherries are then floated and washed to remove impurities and dried whole in a greenhouse for 40 to 45 days. The long, slow drying helps stabilize the bean and fix complex flavors.

In the cup, expect raisins and cherry alongside roasted almonds and warming spices. It is a little less fruity than a typical natural, with a rich, layered profile.
