The Story

This Ombligon from Jhoan Vergara’s Finca Las Flores is part of our Apothecary Collection, where we put unusual varietals and experimental processing. It grows at 1,780 metres in Huila and was processed at the Peñas Blancas Coffee Processing Center.

Every step of the process is tightly controlled. The cherries are floated in water so only fully ripe ones move forward. The whole cherries then rest for 12 hours of oxidation, followed by a 25 minute thermal shock at 50°C. After depulping, the coffee ferments anaerobically for 80 hours, then dries for about 32 hours in a dark, sealed stainless steel dehumidifier that never goes above 37°C, which helps keep its natural aromas intact.

In the cup, it’s a sweet, playful coffee with notes of rosehip, marzipan, black currant, and eucalyptus. It’s a fun, sweet one to share with guests.

Jhoan is a good friend of ours. We visit his farm regularly and were most recently there again in July. We have competed with his coffees many times, and the winner of the 2026 World Barista Championship won with a coffee from Jhoan.
